Yes Hobbyboss or airfix are great kits.
Acrylic are quicker to dry and clean up with water than enamel.
I would stay away from Testor paints.
Tamiya in my opinion is best but costly.
Do have any stash/project to upload?

Looking forward to progress build photo. I have a tiger and Sherman kits. I think i might do my hobbyboss p-38 Lighting but i am settling into new place! And replace some model supplies.
This hobby you do not rush, take your time with everything better result in the end.
I assume you work to say time is limited

Ok, i know a tip for this!
With base already applied, use a qtip apply a bit of thinner then add the mottling colour.
It will "mottle" the paint.
I have not use this tip yet however an expert modeller told me this.
I asked him because i did not have an airbrush at the time, i have one now but not a Compressor

I would apply thinner to one spot at a time, also if have a spare part i would try it out first.
